Food is missing from the portraiture of Hans Holbein, and tonight, food critic, chef and author Matthew Fort joins author and chef Heston Blumenthal to discuss the particularities and oddities of preparing, preserving and cooking food in the sixteenth century.

Fort was the food and drink editor of the Guardian for ten years. He is author of Eating Up Italy (2005) and is currently travelling Italy, working on a sequel.

Blumenthal is chef and owner of The Fat Duck, a three-Michelin-starred restaurant. Blumenthal is self-taught and has only been cooking ‘seriously’ for about ten years. Since 2004, he has collaborated with historians to replicate dishes from different historical periods in the kitchens at Hampton Court Palace. He is a regular contributor to the Sunday Times and formerly wrote for the Guardian.
