Lee Miller wrote many recipes inspired by her travels around the world, including this one. In 1934, she moved from Paris to Cairo, where she took some of her most arresting surrealist photographs.
Lee Miller’s Cairo Cheese and Cucumber Salad
Serves 6
› 225g Greek feta cheese
› 1 1⁄2 lemons, juice only
› 4 spring onions, finely chopped
› 3 1⁄2 tablespoons extra virgin olive oil
› 1 large cucumber, peeled and diced
› 1 green pepper, deseeded and diced
› 1 tablespoon fresh parsley and basil, finely chopped
› Freshly ground black pepper
With a fork, mash feta cheese together with lemon juice and oil. Stir in onion, cucumber and green pepper. Sprinkle with herbs and grind over pepper. Chill in refrigerator for at least an hour and serve.
